Proteins

Proteins are structural and functional molecules built from chains of amino acids. The body uses them when it builds and repairs muscles, skin, organs, enzymes, neurons, memories, and hormones. Among the three macronutrients, proteins are distinguished in the chapter by containing nitrogen as well as hydrogen, oxygen, and carbon.
