Catabolism

Catabolism is the breakdown of larger molecules into smaller ones. The chapter uses the breakdown of fats and carbohydrates into fatty acids and glucose as examples and associates catabolism with a negative nitrogen balance. It is complementary to anabolism, not a state that excludes it.
